The resizing is optional. Myself, I would use XM and set the PSD to the max text length to prevent really long names from taking up too much space. However, it is optional and is your decision.
The centering issue is because your PSD template layer was set up with left justification, not center. If you fix the justification in the template then the text will stay centered, regardless if you are using resizing. However, without resizing, there will be no clamp on how mush space the names can take up (but it will remain centered anyway).
Anyway, go through the documentation I posted so you understand how the resizing works and you can make the decision based on how you want the result to look.
